Public Life = Sickness

A day and a half at work, a funeral visitation, a funeral the next day, and eating at a restaurant means I wake up today congested, coughing, sneezing, and just exhausted and achy. Glad to be spending the next two days in bed with a book, and consuming lots of fluids and vitamin C. I had groceries delivered this morning, and made a huge bowl of my favorite chicken salad with lots of grapes and clementine oranges. Of course, I have to eat something healthy with potato chips…

Generally I can kick this type of stuff pretty quick, so am expecting to be feeling back to 100% by Monday morning.

What am I reading? I am more than halfway finished with Judas: The Relic. This is book 2 in the Judas Trilogy by Roy Bright, and just as fantastic as the first one!

    That chicken looks good. Would you share the recipe, pretty please? I have my brother coming for a few days next week and his meat of choice is chicken. It’s hard to ring enough changes!

        I am sooo sorry, but life proceeded before I was ready lol. I boil boneless skinless chicken breasts, carrot matchsticks, slivered almonds, mayonnaise or miracle whip (I use fat free or light), and potato sticks on top. I shred the chicken, and mix everything. I ditched the potato sticks that were 100% saturated fat, and use potato chips. I added grapes and mandarin oranges for the boost of vitamin C.

    What IS that on top of the potato chips?? And a day or two in bed with a book sounds HEAVENLY. Sometimes I hope for a quick little cold so I have an excuse to do that…but I don’t get sick very often (poor me, ha ha!).

      A day or two is fine, 11 weeks; not so much. And that would be my favorite chicken salad on top of the potato chips LOL πŸ˜‚

        How have *I* never thought of chicken salad on top of potato chips?? I like scooping up my favorite chicken salad with pretzel thins. So you get the creaminess and protein (cuz that’s important) of the chicken salad along with the crunch and saltiness of the pretzels. Probably very similar to the potato chips!
